February 9, 2010: Granny's Beautiful Buns

No, not those buns!

Several people were asking how to form the hot dog buns in today's earlier post. I use a bread recipe that has 3 cups of flour (you can use white flour, bread flour, whole wheat flour or a combination of any of the three). For today's buns, I made a double recipe of dough, using Gold Medal Better for Bread Flour.

Make the dough, let it rise (covered) once, then punch it down. Cover it with a clean towel or inverted bowl and let it rest for five minutes. For the 8 large hot dog buns, I used the entire recipe, and cut the dough into 8 pieces. I formed each piece into a 6" long roll, and placed them in a lightly greased 9"x11" pan...four across the narrow side and two deep. I pressed them down with my fingers so they were slightly flattened. Cover and let rise until doubled in size. Bake at 350F for 20 minutes. Brush tops with melted butter while they are still hot. Remove from pan and cool on rack so bottoms don't get soggy. Granny doesn't like soggy bottoms!


For eight hamburger buns, I grease two 9" square pans, proceed as above but form the 8 pieces of dough into round balls. Put four in each pan, flatten slightly with your fingers, then cover, rise and bake as above.


Or you can make four burger buns and four big cinnamon rolls, as I did. Just roll out half the dough to about 8"x12", spread with softened butter or margarine, sprinkle quite a bit of sugar on top, then a generous amount of cinnamon. Roll up from the long side, quite tightly. Cut into four pieces for big rolls, place in the greased 9" square pan, flatten slightly with fingers, let rise and bake as above. While they are still warm, mix up a bit of powdered sugar, a dash of vanilla and enough milk to make a thin icing, spread over the warm rolls.





Plain dinner rolls? Follow the burger bun directions, but cut into 16 pieces, roll into balls and place in the two 9" pans.

  5. Thanks for this info Granny! We're wanting to make all our own bread and buns this year, so it is a very timely topic for me. The bread is no problem, but it's been years since I made hamburger buns. Now I'm ready to go dust off the bread machine!

  7. Cheryl, I was never a bread baker, and mine always turned out edible, but just barely. I don't know why, but one day everything just clicked and I've not had a failure since! I think it was when I stopped worrying about it and just tossed stuff together until it "felt" right. Now I seem to know when the dough is exactly the right consistency. If in doubt, I go for softer rather than firmer dough. And the food processor is my friend ;-)

    Villager, if I could find a bread machine that actually baked loaves as I like them, I'd make all my own bread. I do have one (at home in WA) that is great for dough making, as it's so large. It just doesn't turn out a very good loaf of bread. I might give in and buy another one to try, as I don't like having the oven going much through the summer months. I have a recipe for herb bread that would make delicious burger buns, I think I need to dust that one off soon.

    Stefaneener, I usually make the smaller buns, so I can use them as sandwich rolls and Mr. H can eat them as dinner rolls. Sometimes I crave a humongous burger, though.

    I LOVE veggie burgers. I buy the Morningstar Farms spicy black bean burgers for myself, but Mr. H won't even try them. He's very much a white bread and meat person.

  11. Mmmm, makes me want to bake some homemade bread. Haven't done so in a few months. And I've never tried cinnamon rolls, although I love to eat them. That's the neat thing about blogging. I get so inspired by what people like you are doing.

  13. I've never even thought about making my own buns. I ought to. I always complain that the only good whole wheat buns are from Trader Joes, but they are too small for the hamburgers. Why are all real whole wheat buns too small? My DH wishes I would serve the yummy white buns, but he always gets whole wheat. He won't eat veggies so I have to get something good into him.

    Kitsap, I know. I'd have to say my favorite is doughnuts. Either way, Mr. H manages to eat most of what I bake before I can pig out too much, which is a good thing (for me, not him). I did get one of the four cinnamon rols.

    Daphne, I do sometimes make my own whole wheat buns. I can't justify paying $4 or more for a package of Oroweat whole wheat buns from the grocery store, that taste like soggy cardboard. Mr. H only eats soft white, so I make and freeze the "good" stuff for myself. I have to admit though, I really like soft white better. I've forced Mr. H to eat vegetables (he'll always eat salads just fine). He does gripe when he's on green bean overload every summer.

  15. Firstly, I must say that your buns are fabulous!

    I always place a tin in the bottom of the oven before I pre-heat, and fill it with boiling water from the kettle as the bread goes in (be careful because it does bubble up and splash). I've found it gives the bread an extra lightness!

    No, seriously, I had never thought of making my own hotdog or hamburger buns, despite the fact that we make our own bread every week. That is a wonderful, useful post, and I love turning the extra half into cinnamon buns... yum!

  21. Meredith, there's just no comparison to store bought, unless you have an excellent in-store bakery. Using my food processor (or bread machine) to make the dough takes all the work out of it. I never liked kneading dough, and now I have arthritis in my hands so it's painful. Let the machine do it for me! I'm not a kneady person ;-)

  25. Hi "AG". I'm new to gardening, baking, and your site. I'm loving all of it. I found your site a few days ago and have been "lurking" it ever since.

    I've been learning to bake bread ever since I found out I was allergic to commerical yeast (a few months ago), and have been looking for a nice "white bread" type recipe, and I found it! Your bread was amazing. I had to change the recipe a little because I had to use a sourdough starter instead of active yeast. I took pictures, because I was so proud of my little buns LOL. I don't think I can post them in the comments though. Or I don't know how. I wish I could show you the benefits of your wonderful recipe. ^_^

AG here I've been wondering how to make hot dog buns for my kids for a year, thinking I needed a special pan or something (thanks to the King Arthur Flour catalog that fills my head with nonsense.) I can't wait to try your shaping technique! We'll see how it works with whole wheat flour though since that is all I use. :)

  28. Sustainable Eats, it will work just fine with whole wheat flour. I just use white, because Mr. H won't eat anything else. The size pan I used does make quite large buns, you might want to use a slightly smaller pan for regular sized buns. I ended up cutting the end off of each bun, so it would fit the hot dog, but I used the ends as mini-dinner buns!
