November 30, 2013 - The "Empty the Freezers" Challenge Continues

The first two weeks of the "empty the freezers" challenge went exactly as planned.  I stuck strictly to the menus, though only for Mr. Granny the last week or so.  After I gained two pounds from the first week's meals, I ended up tweaking my meals just a bit and got everything under control again.  Even though I ended up removing quite a bit of meat, fish, poultry, veggies and breads from the freezers, I took advantage of a good sale on lean ground beef and ended up freezing 12 pounds of it.  So the only freezer that looks as though it might be getting a bit emptier is the refrigerator freezer.

This week I have to concentrate on using up my glut of beef wieners, ground beef and chicken breasts.

11/30 Crockpot baked beans
Grilled all beef wieners (f)
Coleslaw
Corn muffins

12/1 Grilled chicken breast (f)
Green beans (f)
Baked sweet potato
Tossed salad

12/2 Shepherd's pie (ground beef (f), mixed veg (f), mashed potatoes)
Lettuce wedge w/light 1000 Island dressing

12/3 Grilled Salmon (f)
Creamed peas (f) and potatoes
Carrot/raisin salad
Tartar sauce/lemon juice

12/4 Beef (f) stew (peas (f), carrots, celery, potatoes)
French bread

12/5 Fried chicken breasts (f)
Corn (f)
Boiled potatoes
Chicken gravy
Coleslaw

12/6  Spaghetti w. meat - sauce and meat (f)
Green beans (f)
Garlic french bread (f)
Tossed salad

  1. I really ought to make a menu for the week. The thing I hate about cooking dinner is figuring out what to make each day. If I did it once a week it would probably make my life happier. But so far I haven't.

    1. Daphne, I find it makes life much easier, and I make fewer shopping trips, but my good intentions usually don't last long, LOL! Let's see if I can at least keep it going through December.

    1. Yes, Ashlee, it took all of 4 days of emptying the freezer to hit that "double danger" on my weight chart! It didn't take much juggling though, mostly smaller portions, not so much bread and lots of green tea to fill me up and be right back where I wanted to be.

  3. Freezer food or otherwise, that sounds like a great week's menu! My wife participates in a meme called "Meal Planning Monday" which encourages people to plan their meals in advance. I think this is good as it reduces waste and promotes variety in one's diet.

    1. Mark, I'd love more variety in our meals, but Mr. Granny is such a picky eater we seem to just repeat our same menus over and over! I certainly find I'm shopping for groceries less often.
