August 7, 2009: Relish and Pickles and Pumpkin Pie


Three pints of sweet relish, four pints of bread & butter pickles and another pumpkin pie kept me in the kitchen for a few hours today. I used up all my garden cukes, and the jars are a wee bit skimpy on pickles, so I probably should have just canned three pints and packed them more fully. Oh well, too late now.

Three of us taste tested the ketchup I made yesterday, and it was really good! It didn't separate or get watery, the color was pleasing, and it was a bit sweeter than store bought ketchup.

That thirty-some pounds of tomatoes will just have to wait until tomorrow. I've done enough for one day!


Sweet Pickle Relish
Yield: about 4 pints

4 cups chopped cucumbers
2 cups chopped onions
1 cup chopped sweet green pepper
1 cup chopped sweet red pepper
1/4 cup salt
3 1/2 cups sugar
1 Tablespoon celery seed
1 Tablespoon mustard seed
2 cups cider vinegar

Combine cucumbers, onions, green and red peppers in a large bowl; sprinkle with salt and cover with cold water.

Let stand 2 hours. Drain; rinse and drain thoroughly

Combine sugar, spices and vinegar in a large saucepot. Bring to a boil. Add drained vegetables; Return to boil and simmer 10 minutes.

Pack hot relish into hot jars, leaving 1/4 inch head space. Remove air bubbles. Adjust two-piece caps. Process 10 minutes in a boiling-water bath.

  5. Dan, I like the cider vinegar so much better than white. Even when it calls for white, I use cider...like in the ketchup recipe I just made. I made Mr. H some dill relish, and used white. It has a nasty astringent taste to me, so the next batch will be made with cider vinegar. It does make dill pickles a slightly off color, but I don't find that bothersome.

  7. Another productive day in AG's kitchen! Good work. The garden is doing you proud with the tomato production. I miss my central Washington garden's tomatoes, melons, peppers, and cucumbers. Such a challenge over here to get a decent hot weather crop harvest.

  8. SB, When? There was dinner, and dishes, and clean the kitchen floor for the second time today because I (accidentally) threw the canning funnel half way across the room and got sticky sweet pickle juice all over....

  10. i watered my plants today. that was enough work for me. you'd run circles around me!

    tomorrow i do plan on harvesting my first eggplant and grilling it, then topping it with some homemade pesto and bruschetta. (that's if i feel like it.) :P

  11. Stefaneener & Kelli, believe me, the laundry is piling up and the tomatoes are not going to wait for me much longer! I'd love to be outside in my garden during this cooler weather, but I'm in the kitchen playing catch up.

  15. Sue, guess what I get to do this morning....cook 28-1/4 pounds of tomatoes (we ate the big one last night). And then I must pick more. I hate to tell you this, girl, but I tallied up the poundage on them last night and....not sure you can handle this...112 pounds.

  17. LOL, Kelly...Maybe when I get all these tomatoes and cucumbers canned, I'll have time to cook again! With hot weather, fall planting and abundant veggies to take care of, our meals lately have left a lot to be desired. Can we say "Hamburger Helper"?

  21. Toni, I just tore out three diseased plants, so I think I have 24 left. They are really giving me a lot of tomatoes, and some of them are over 1-1/2 pounds!
