September 10, 2010: Catching Up. Again.

It was an all day job, but I got caught up. Well, I thought I got caught up, then I looked in the refrigerator.


Eight cups (four bags) of peeled and shredded zucchini, packaged for the freezer. It will go to my oldest daughter, who doesn't like peelings on her zukes. Three pounds of green beans, washed, snapped, blanched, drained and ready to be frozen before bagging. Eight pints of diced tomatoes in juice....a long process of peeling, coring, seeding, dicing and heating in tomato juice that was made earlier this morning from the small and cherry tomatoes. Three quarts and one pint of leftover tomato juice.

I heaved a sigh of relief, then I opened the refrigerator to get salad fixings out for dinner. DRAT! There, in the plastic box, were two more zucchini and another bag of green beans!

Before you ask, yes. I bought more jars.

  3. I think I am going to have to break down and peel and grate and freeze the zucchini. Neither of us really likes zucchini cakes/breads but I am running out of people to give them to and there is only so much fresh eating of zucchinis I can manage without the menu being all zucchini. I have a small woodpile of zucchini on my counter making me feel guilty at the moment.

  4. Roz, thank you. Now get at that zucchini. It grows new ones in the refrigerator, you know! I swear, every time I put two in the refrigerator, the next time I look there are four of them in there ;-)

    Kitsap, I can only make so many loaves of zuke bread, so I'm glad my daughter can use the excess. I don't peel mine, but she doesn't like anything green.

  6. Eeeep! Thanks for reminding me, Erin. The green beans are still on the tray in the freeze, gotta get them bagged today. I swear, I don't think I'm ever going to catch up...it's starting to wear me down :-(

  7. lol I just knew you couldn't resist. It is like your tomatoes. Last year you said you would plant less and you planted around 50 of them. Not less. Though I was wondering if it would be your kids that would buy you more jars. If I had a mom like you, I certainly would. I would know that I'd get all those jars back all filled up.

  8. Daphne, what can I say...they were on sale!

    Last year, son John bought me several dozen new jars. I do give the kids canned goods, and refresh my donations to them as the jars are returned. For every empty jar they bring back, they get one filled jar. I'm very strict about it.
