November 29, 2008: Just Biding My Time

Until something more interesting comes along, it's been a good time to get some baking done. My WIFI connection has been very sporadic this past week, the weather has cooled down considerably, and we've had a bit of rain. What better to do than play Scrabble with the computer and bake bread!




I made a loaf of white bread (for Mr. H, who will eat nothing but), two mini-loaves and four hamburger buns from a double recipe of Home Style White Bread. I don't use a bread machine, I do mine in my food processor and then bake in a regular oven. I've tried two different bread machines, but neither gave me the results I really like. The food processor is so quick and easy.




Home Style White Bread
Makes one loaf

1 cup water (70 - 80 degrees)
2 tablespoons butter or margarine -- softened
1 teaspoon salt
2 tablespoons sugar
2 tablespoons nonfat dry milk powder
3 cups bread flour
2 teaspoons active dry yeast

In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).

I also made a delicious loaf of whole wheat/cracked wheat bread for myself, but I'm not showing a photo of it. It wasn't the prettiest loaf of bread I ever made (I'll say no more than that), but the taste made up for the lack of good looks! I didn't follow a recipe, I just kind of threw things together. I need to do a bit more experimenting with it before I show it and the recipe off.

  1. I had the opposite problem with the bread I baked for Thanksgiving. I made rolls with half and the other half I made into a braided loaf. It was really pretty. I tried to pretend like the rolls were good, but I didn't fool anybody.

    I wish I had the secret touch that you have. Yours are gorgeous.

  2. Thank you, Cheryl. Do you have a food processor? I never could bake decent looking/tasting bread until I began using mine. I just dissolve the yeast in the warm water, then put everything in the processor and let it run until it comes together. Test for moisture (I like mine a bit soft and sticky) then process for about one minute. Dump it into a greased bowl, cover and let rise. Punch down, let rest 5 minutes and shape. I use any recipe that calls for about 3 cups of flour. I doubled mine today, but it was quite hard on the processor, so I think I'll stick to single batches in the future. It takes less than 5 minutes to whip out one batch, so ten minutes spent on two batches is not a lifetime!

    I usually use half and half bread flour and whole wheat flour or all purpose flour. Using all bread flour makes a nicer loaf, but I only do that when "pretty" counts!

    I have a couple of other recipes I'll post this winter, ones we really love and they are super simple.

It's my personal cell phone, and I don't even know my number...because I never call myself! I may have copied it wrong from our main phone.

  7. I bought a food processor the other day, a 10-cup capacity, but when I got it home one of the blades was missing. It really bugs me when people bring stuff back to the store and the store just puts it back on the floor without checking. Once I exchange it, I'll try making it in the processor.

  8. I can't wait to give this a try. We like a softer texture bread and the last bread recipe I tried used all-purpose flour and was baked in a dutch oven. It tasted good but the crust was so hard I thought I might break a tooth!

  9. bettyinga, I like a crusty bread sometimes, but not on my plain white bread. For that, and for the buns, I always brush butter over the surface of the crust just as it comes from the oven.

    The burger buns were delicious! We had them with grilled hamburger last night, and I'm going to make another entire recipe into buns today for ham sandwiches and for some extra long hot dog buns to go with the extra long hot dogs I bought last week.

    I just answered your comment with a really long one, but it seems to have got itself lost somewhere! I wrote that today I just tossed all the ingredients into the food processor, added the warm water and processed it for about 60 seconds total. Dumped it into a Pam sprayed Ziploc bag to rise. It was so easy, it almost made itself!
