Yes I can! Not to be confused with Ribbit's Yes, As a Matter of Fact, I Can!
This morning, this is what was staring at me when I got up................
So this afternoon I turned four quarts of crushed tomatoes into this................
The recipe for this sweet Chili Sauce is here. I added 1/4 cup more vinegar to compensate for the low acid yellow tomatoes. There were only three of them, but I didn't want to take any chances.
We love this stuff mixed with onions and canned tomatoes on Swiss steak or hamburger patties. Tonight we used the leftovers as a dip for our sauteed shrimp. Everything in the sauce came from my garden, except for the vinegar and spices.
We eat, therefor we garden.
That's great! I just hope to harvest some more tomatoes before I head out of town for a week. I know my Aunt will do it for me, hehe.
ReplyDeletebut can you and ribbit can-can??
ReplyDelete(Sorry, I couldn't stop myself)
Great tomatoes!
Gorgeous! There is something so rewarding about seeing those jars on the counter cooling. Especially when they are as pretty as those are!
ReplyDeleteSinfonian, I think tomorrow will be pickle relish. Everything comes at once!

Amy, I'll bet Ribbit and I could can-can like nobody else can! If I could just get her out of the can ;-)

KitsapFG, I used to can a lot, but kind of gave it up after the kids grew up and left home. Not to worry, they show up weekly now to see what they can haul home with them!
wow! i want to can!
ReplyDeletei see my picture on your desktop in the background! =)
See, Kelli...I told you your picture was my wallpaper! I LOVE that picture, it makes me smile every time I see it.
ReplyDeleteJoin us....start canning!
Can ergo sum?
ReplyDeleteYummy! If my 24 tomato plants ever start ripening, I'll have lots of fruit to preserve. I think I'll be adding this recipe to my to-try list. Thanks! Love the 2008 garden photos too...
ReplyDeleteNever getting me out of the can now. I learned I can lock the door.
ReplyDeleteI can't believe all those tomatoes! I got two or three a day for a while there and thought I was going to drown. They're so huge!
That's a great tomato harvest, Granny! My romas are coming in like that, and are frozen every couple of days. I'm not sure if i'd like that chili sauce....it sounds freaky! Oh well....you're weird, and talk funny. Ha!
ReplyDeleteI think your quote "We eat, therefor we garden" seems really wrong right now. I keep traveling so I have all this produce in the fridge. It glares at me every time I open it. Then it pleads with me. It doesn't want to rot before its time. I keep trying to eat it all but I'm struggling. For me it would be "I garden therefor I eat". Maybe my next door neighbor would like my snow peas? Their cute little cries keep saying "Don't leave me here to die."
ReplyDeleteLooks delicious!
ReplyDeleteBeautiful tomatoes. I am making veggie soup today with some of ours. Oh, I used your recipe for onion rings the other night. It was a hit!
ReplyDeleteHeskie, sum can. ;-)

Fiona, be sure to try the Swiss Steak recipe (just do a blog search for chili sauce). It's from the old Farm Journal cookbook, and the only reason I began making that sweet chili sauce. I can it in half pints just to use in that recipe. The sauce itself is quite sweet, so for most dishes I just add it to canned tomatoes.

EG, I'm not liking my Romas at all. They are quite mealy and don't have a great flavor. Maybe because the plant is dying? You talk funnier, poopyhead.

Daphne, "We eat, therefor we garden" is my personal little rant against Sarah Palin's "We eat, therefor we hunt". That's about as political as I'm ever going to get on my blog. I'll gladly take your snow peas. I have a bag of sugar snaps in the freezer. Somewhere. I can't find them.

Kristina, we like it, but I found another recipe for it that I might try that uses brown sugar. I'm thinking that might make a nice sauce for barbecued meats. Maybe add a bit of liquid smoke to it.

MissyM, glad you enjoyed the onion rings. I have another big mixing bowl heaping with tomatoes that I picked yesterday, and I still have to pick some today, so I'm thinking veggie soup sounds pretty good right now.
OMG! Thats ALOT of tomaotes!
ReplyDeletepoopyhead.....Ha!
ReplyDeleteLOL, Tiffany, those are just the tip of the iceberg! I have tht many on the counter again, waiting to be canned.

EG, I calls 'em the way I sees 'em
;-)
Sorry my neighbor got my snow peas. I asked her if she wanted them and it was an enthusiastic yes. As I handed them to her she opened the container and started eating them right away. I guess she has been snow pea deprived. I'm kinda sick of looking at them right now. I think I've eaten so many I'm turning into a snowpea.
ReplyDeleteDaphne, I'm a green bean ;-)
