July 5, 2012- Thursday's Kitchen Cupboard

With all the hubbub and excitement of our family get together yesterday, I almost forgot about today's post!  There were 20 of us gathered here for way too much food and a night of watching fireworks, either from out driveway or from the banks of the Columbia River, a short walk from the house.  We always sit in our driveway for a great view of the aerial displays, which are shot from a barge directly in front of our house and at a distance of about two blocks 'as the crow flies'.

Now....on to Thursday's Kitchen Cupboard, AKA Granny's Garden Dinners.


Thursday
Pork Roast
Cinnamon Applesauce
Mashed Potatoes (potatoes)

Green Beans (green beans)
Salad (lettuce, cucumber)

Friday-Leftovers
Chicken Stir Fry with Noodles ( (snap peas, carrots, summer squash, onions, broccoli, peppers-freezer)
Cold Pork Slices, Sesame Seeds and Hot Mustard
Lettuce Salad with Sweet and Sour Vinaigrette Dressing (lettuce)

 Saturday
Spaghetti with Meat Sauce (freezer tomato sauce, fresh basil, oregano, garlic, onions)
Green Beans (beans)
Hot Rolls (rolls-freezer)
Sliced Cucumbers and Baby Lettuce
Ranch Dressing (garlic, chives, dill, parsley)

Plus a ton of food brought by the two daughters!

  1. I love that you bake "for the freezer", how do you keep all those lovely dinner rolls fresh out of the freezer? Just toss them in a Ziploc?

    1. Anywhere, I just Ziploc them if I make only a few, as they don't last long. If I'm going to keep them more than a week or two, I wrap them in Saran wrap and then put them in a Ziploc freezer bag.

  2. Oh, Crumbs! Granny, you are bad! I already ate lunch, and you just went and made me hungry all over again. LOL. All that bread... looks so lovely. Not to mention all the dishes that go with the breads. :-)

    1. Robin, Mr. Granny is wanting more fried zucchini, but I keep making bread. My youngest son was wanting zucchini bread with no nuts, so I made him a couple of loaves with dried cranberries.

  4. Yesterday's excitement won't even compare to what's gonna take place tomorrow in your garden. I am so.......jealous! :) A video would be sweet!!!!!

  5. Gosh, I miss cooking. And I don't realize it until YOUR blog reminds me of it. Darn hot weather!!!!
    And no, I'm NOT getting AC. But I sure do miss big meals with actual cooked food. Not sandwiches. Not cold salads. REAL, HOT, food. Sigh.

  7. Wait! What?!? No a/c? And you bake? I would melt away. I have had the A/C on since early spring. I can't handle the humidity. I can work out in it, but I have to sleep in the cold. We keep the house at 65 and I actually worked up a sweat in here this morning. We found signs of a mouse and had to empty cupboards, etc to bleach everything. Yuck. We never have this many mice (3 so far), but I think the heat and lack of rain this year are forcing them inside for water and cooler temps. One actually drowned in a soaking bowl in the sink. Yuck! Have I said that yet? It just makes my house seem so dirty. How did I get started on mice?

    1. Langela, I had a mouse in our AZ house once, so I put D-Con out to get him. He kept getting into the D-Con (yes, YUK, it was right next to the kitchen sink), and getting it all over the counter. I had read where that makes them die of dehydration, so I figured he must be getting thirsty. I filled the sink with water one night, and the next morning he was floating belly up! That was our one and only mouse, thank heavens. I did have a mouse here in our garage this winter. Or maybe a family, by the looks of all the mouse poops out there. I D-Conned again, and I'm not seeing any more evidence, but haven't found any dead mice either.

    2. Living in the country, we are used to some activity in the fall when the crops come out of the fields. I just hate them. We have used poison in the past, but they tend to crawl inside the walls and die and they stink so bad. Now we just trap them. Yuck!

      I have no idea what is wrong with your peppers. If I had to guess, I'd say it's verticillium wilt.

      Here is how I make my yeast rolls:

      1 cup water
      2 1/2 tsp. yeast
      1/4 cup sugar

      2 tbsp margarine or butter
      1 egg, beaten
      2 Tbsp. powdered milk
      3 1/4 cups flour
      1 tsp salt


      Place the water, sugar and yeast in the pan of the bread machine. Let the yeast dissolve and foam for 10 minutes. Add the beaten egg, butter, flour, dry milk and salt to the yeast.

      Use "dough" setting. When kneading stops, unplug the machine and transfer dough to a greased ziplock bag. Zip it closed and let the dough rise until double. Punch down, let dough rest for a few minutes then form into rolls, buns, or one loaf of bread. Place in greased pan, cover and let rise until doubled.

      Bake rolls at 350F for 20 minutes or until golden brown (35 minutes for bread). Remove from pan to wire racks to cool.
